Baked Eggs in Tomatoes
Ingredients :
- 2 large tomatoes (200g each)
- 1 teaspoon (5g) fresh thyme leaves
- Asparagus spears (100g), trimmed
- 2 large eggs (60g each)
Instructions :
- Heat the oven to 200°C.
- Line a baking tray with baking paper. Slice the lid off each tomato and use a small spoon to remove the core and seeds, season with cracked pepper and thyme.
- Place on the prepared baking tray along with the asparagus spears. Roast for 10 minutes,or until the tomatoes are nice and tender.
- Crack an egg into each tomato and lightly season. Bake for a further 10 minutes or until the eggs are set and cooked to your liking.

- When seasoning, try substituting normal salt and pepper with a lovely herbal vegetable salt (I use Herbamare) and cayenne pepper, one of the most powerful medicinal herbs in the world.
- Its reported therapeutic benefits are almost too unbelieveable (a quick google search and you'll know what I mean) but its reputation keeps growing.
- Many believe that Cayenne is the most useful and valuable herb in the herb kingdom, not only for the entire digestive system, but also for the heart and circulatory system.
- From my own experience, one day my youngest cut his finger, I sprinkled cayenne pepper on it and the bleeding ceased immediately.
