Cabbage and carrot slaw
This traditional coleslaw is an especially great salad to make for a potluck it travels well because it does not contain any mayonnaise.Ingredients :
- 2 cups thinly sliced cabbage 500 mL
- 1 cup small carrot strips 250 mL
- 2 tbsp cider vinegar 25 mL
- 1 tbsp extra virgin olive oil 15 mL
- Salt and freshly ground black pepper
Servers 4
Instructions :
- Ina salad bowl, combine cabbage and carrots.
- Add vinegar and oil and toss to combine. Season lightly with salt and pepper. Cover and refrigerate for at least one hour before serving.
Broccli mandarin salad
This salad can be described as a “meaty” one that everyone is bound to like (even if they never touch broccoli). Broccoli is available year-round but the homegrown is best when in season.Ingredients :
- 1 head broccoli, trimmed and cut into small florets 1
- 1/2 cup golden raisins 215 ml
- 1 can '10 oz/284 mn ) mandarin oranges, drained 1
- 1/2 cup bottled creamy garlice dressing 125 ml
- Sattand freshly ground black pepper
Servers 6
Instructions :
1. Ina large bowl, combine broceoli, raisins, oranges and dressing. Season lightly with salt and pepper.and toasted almonds
2. Cover and refrigerate for several hours before serving.
Tip :
- There are many varicties of creamy garlic dressing available.- In this recipe, use either a commercial one or Creamy Curry Dressing . I also add chopped red onion and toasted almonds or sunflower seeds , for their nutty flavor.
