Fruit cake

i love this cake , no suger, no eggs, no butter and no cream !

ingredients : 

  1. 1 kg dried mixed fruit
  2. 2 cups (500 ml ) light peach tea
  3. 2 cups (350g) self-raising flour

Instructions :

  1. In a large bowl, place the dried fruit.
  2. Add the iced tea and stir well.
  3. Cover with cling film and soak overnight.
  4. preheat oven to 125° C.
  5. Line a 20 cm springfrom cake tin with baking paper.
  6. Stir the flour into the fruit, and mix well to combine.
  7. Spoon into the cake.
  8. Bake, in the lower third of your oven, for 1/2 hours or until cooked through.
  9. Romove and leave to cool.
  10. wrap in alfoil or place in an air-tight container where this cake will keep nicely for 3 to 4 weeks.
