Egg and chive sandwich

Ingredients :

  1. 2 hard-boiled eggs, halved
  2. 2 tablespoons low-fat ricotta cheese
  3. 2 tablespoons finely chopped fresh chives
  4. 4 slices rye bread

Instructions :

  1. Place egg, cheese, and chives in medum bowl; using back of fork, aush until combined.
  2. Sandwich egg mixture between bread slices. Cut as desired to serve.

Tip :

  For per fect hard boiled eggs, place eggs in salted boiling water for 7 minutes and then drain. Immediately put them
in cold water and stand a few minutes before peeling. It’s worth doing a few at a time so you have some on hand for
sandwiches, salads, or just a simple snack.
