Instructions :

1. Heat your barbecue and place the salmon steaks "with the skin down" on it because this allows the flesh to hold during cooking.

2. Place the maple syrup in a bowl or cup.

3. After 5 minutes, turn the pavers over, and coat them with syrup with the back of a spoon.

4. Salt at your convenience.

If you have time and an electric barbecue, you can add maple syrup regularly and caramelize it by turning them briefly. When this side is golden, turn the pavers over again. Coat the sides with syrup and let them cook through. There is no risk of it burning as the skin protects this side of the fish! Don't hesitate to add maple syrup during cooking. Once they're ready, remove them from the barbecue and serve. You can remove the skin for service or leave it. It is very easy to remove with cutlery. Don't forget to reseal if the pavers are thick. Gourmets can also add a little maple syrup on top!
