 Chicken and rice balls prepared in just 20 minutes

Ingredients:

For the meatballs:

  1. 1 pound (454 g) ground chicken
  2. 1 cup of cooked and cooled white rice (210 g)
  3. 1 egg
  4. 1 onion
  5. 1 clove of garlic
  6. ½ (60 g) cup flour
  7. 2 tablespoons (30 ml) olive oil
  8. Salt and pepper, to taste

For the sauce:

  1. 2 tablespoons (30 g) of butter
  2. 2 tablespoons (24 g) of flour
  3. 2 cups (500 mL) chicken broth
  4. ¼ cup (65 mL) sour cream
  5. 1 teaspoon (5 ml) of paprika
  6. Salt and pepper, to taste

Preparation:

  1. In a large bowl, combine all the meatball ingredients; chicken, cooked rice, egg, grated onion, a clove of garlic, salt and pepper, except for the flour and oil.
  2. Form meatballs and roll them in flour.
  3. In a saucepan, heat 2 tablespoons (30 ml) of oil.
  4. Cook the meatballs for about 7 minutes. Reserve.
  5. In the same pan, melt the butter and add the flour while whisking.
  6. Stir in the chicken broth, sour cream, paprika, salt and pepper.
  7. Bring the sauce to a boil then return the meatballs to the pan.
