Makes about 4 cups of shaved ice

Instructions :

  1. Bring the water and sugar to a boil in a large saucepan set over high heat, stirring just until the sugar dissolves. The moment the mixture boils, remove it from the heat and cool at room temperature for 10 minutes.
  2. Stir in the grapefruit juice and salt. Pour into a 9 × 13-inch baking pan and freeze on the floor of the freezer for about 3 hours, stirring with a fork every 20 minutes or so to distribute the ice crystals evenly throughout the mixture. After the mix - ture has frozen fully but is still soft, flatten it out in the pan and cover with plastic wrap. Tightly wrapped, the granita can be stored in the freezer for up to 2 weeks.
  3. To serve, scrape up the ice crystals from the granita’s surface with a fork; gather these together and scoop them into individual-serving bowls, cups, or glasses.
