  I offer you delicious potato croquettes with minced meat, a gourmet, easy and quick homemade recipe that can be present on the Ramadan tables as a starter and as an accompaniment to a salad and soup.

  They will replace the traditional oriental maakouda cakes. Garnished with a very fragrant minced meat stuffing, these fried croquettes in oil or deep fryer are prepared with mashed potato flakes in a bag (not potato starch, which has nothing to see apart from the name and which will not give you a similar result).

  Of course, you can use potato which will need to be cooked before mashing it. To prepare these potato croquettes with minced meat, you will need:

For the mash :

  1. 500 gr mashed potatoes
  2. 1 egg
  3. 2 tablespoons all-purpose flour
  4. salt to taste
  5. 1/2 teaspoon of nutmeg

For garnish :

  • 200 gr of minced meat
  • 1 onion
  • 3 cloves of garlic
  • Salt
  • 1/2 teaspoon of each spice:
  • Black pepper
  • Ginger powder
  • Coriander powder
  • Chilli powder
  • Ras el hanout
  • Parsley and chopped coriander
  • Frying oil

Preparation :

  1. Sauté in a pan with a drizzle of olive oil onion and crushed garlic. Add the grated carrot, minced meat, spices and mix.
  2. Cover and cook for about 10 minutes over medium heat. At the end of cooking, add the chopped parsley and fresh coriander. Allow filling to cool before using.
  3. If you make the recipe with potatoes
  4. Peel potatoes. Rinse them then cut into cubes. Cook in salted water then mash
  5. Otherwise, follow the directions on the packaging.
  6. Add the egg and mix then add the flour and mix again. Add salt and nutmeg.
  7. Place a strip of cling film on the work surface then flour generously, the mash should not stick.

NB: This step can be replaced by breadcrumbs for a crispier result

Add a good tablespoon of mash. Flatten slightly and add about a tablespoon worth of stuffing.

Using the plastic film, adhere the stuffing to the puree by pressing with your index fingers then enclose the stuffing by folding the upper part towards you. Then shape the croquettes either cylindrical or rectangles, pancakes etc ...

Dip the croquettes in the hot, but not hot, frying oil. Leave to brown each side then remove on absorbent paper. Serve hot.
