Ingredients :

  1. Chicken thighs: 6 pieces
  2. Basmati rice: 2 cups
  3. Water: 2 cups
  4. Onions: 3 grains (large)
  5. Orange: 1 piece
  6. Tomato: 1 piece (chopped small cubes)
  7. Garlic: 5 cloves
  8. Ghee: 2 tbsp
  9. Tomato juice: 2 tbsp
  10. Saffron: 1 teaspoon
  11. Turmeric: 1 teaspoon
  12. Salt: 1 teaspoon
  13. Black pepper: 1 teaspoon
  14. Cardamom: 5 pieces
  15. Cloves: 5 pieces
  16. Cinnamon: 2 sticks
  17. Bay paper: 2 sheets
  18. Vegetable oil: 2 tablespoons

How to prepare :

  1. In a frying pan, put vegetable oil and simmer over a medium heat, add chicken thighs and black pepper to it, and fry until the chicken changes color.
  2. Put half the amount of ghee in a large saucepan and leave it on a medium heat and add water, salt, turmeric, saffron, cardamom, cinnamon, cloves and bay leaf and stir them well and leave them until the mixture boils, then add the chicken, tomatoes, sprinkle the orange and tomato juice and leave them for 30 minutes to fully cook the chicken.
  3. During this period, we prepare the rice by washing it, immersing it in lukewarm water, leaving it for 30 minutes, and then filtering it from the water well.
  4. Chop the onion and garlic into slices and put them in a saucepan with the rest of the ghee and saute them until golden, then add the rice and sauté it well with the onions.
  5. We remove the chicken from its broth, cover it with rice, onions and garlic, close the pot and leave it until it is completely cooked, if the amount of water is small, heat a little water and add it to the rice until it is completely submerged, and leave it on a low heat for half an hour or until it is cooked.
  6. After making sure that the rice is cooked, pour it into a serving dish and put the chicken on top. Raisins can be added to garnish.
