 Chicken, Broccoli and Rice Bake

  Hearty and Delicious, this chicken, broccoli and rice bake will satisfy all appetites!


  1. 3 cups cooked rice
  2. 1/4 cup butter
  3. 1/4 cup flour
  4. 1 cup chicken broth
  5. 1 1/2 cups milk
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon pepper
  8. 1 Tablespoon Sherry
  9. 1/4 cup Parmesan cheese (shredded)
  10. 3 cups cooked chicken (chopped)
  11. 1 1/2 cups steamed broccoli (chopped)
  12. Topping
  13. 1/4 cup Parmesan cheese (shredded)

  1. Melt butter in a large pan.
  2. Stir in flour and cook for 1-2 minutes.
  3. Stir in chicken broth and milk.  Simmer over low heat until mixture begins to thicken.
  4. Stir in salt, pepper and sherry
  5. Stir in Parmesan cheese.
  6. Add chicken and broccoli. 
  7. Spray a baking dish with nonstick cooking spray.
  8. Add a small amount of chicken mixture to bottom of dish.
  9. Add rice and then top with remaining chicken mixture.
  10. Sprinkle with remaining Parmesan cheese
  11. Bake uncovered in a 350 degree oven for 30 minutes or until bubbly. 


Add additional salt and pepper to taste. 

Recipe can be doubled.

To freeze,  let mixture cool, cover with foil, label and freeze.  To reheat, pull from freezer at least 6 hours before baking so it can partially thaw. It is okay to bake partially frozen. Bake at 350 for at 60 minutes or until bubbly throughout.
