 PINTOS AND SAUSAGE

Pintos and Sausage- these beans cook up super creamy and tender, perfectly flavored with sausage in every bite.

PREP TIME: 10 MINUTES COOK TIME: 1 HOUR 40 MINUTES

INGREDIENTS :

  1. 1 pound dried pinto beans
  2. 2 tablespoons vegetable oil
  3. 1 medium onion, diced
  4. 1 green bell pepper, diced
  5. 1 pound smoked sausage, sliced
  6. 2 garlic cloves, minced
  7. 6 cups water
  8. 2 teaspoons salt
  9. 1 teaspoon pepper
  10. 1/2 teaspoon dried oregano
  11. 1/2 teaspoon dried basil
  12. 1/2 teaspoon paprika
  13. 1/4 teaspoon dried thyme
  14. 1/4 teaspoon cayenne pepper

INSTRUCTIONS :

  1. Rinse and drain the beans and place in a large bowl. Cover beans with water, cover the bowl and refrigerate overnight.
  2. Heat oil in a Dutch oven and saute the onion, green pepper, and sausage until onion becomes translucent.
  3. Add garlic and cook 1 minute.
  4. Drain beans and add to pot along with 6 cups of water. Bring to a boil and then simmer 60 minutes. Watch the water level and add more if neccesary to keep beans covered.
  5. Add remaining ingredients and simmer 30 more minutes, or until beans are tender.

NOTES :

To make these beans spicier, double the amount of cayenne and serve with hot sauce.
